  • 1 (6 oz) can tomato paste

  • 2 cups beef broth (or chicken broth)
  • 2 teaspoons paprika (sweet or smoked)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon cayenne pepper (optional, for a bit of heat)
  • Salt and pepper to taste
  • 1 1/2 cups elbow macaroni or any short pasta (such as rotini or penne)
  • 1/2 cup shredded cheddar cheese (optional, for garnish)
  • Fresh parsley or basil, chopped (optional, for garnish)

  1. Cook the Ground Beef:
    In a large pot or Dutch oven, heat a bit of oil over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until it’s browned and cooked through. Drain any excess fat if necessary.
  2. Sauté the Vegetables:
    Add the chopped onion, bell pepper, and garlic to the pot with the ground beef. Sauté for about 5 minutes until the vegetables are softened.
  3. Add the Tomatoes and Seasonings:
    Stir in the diced tomatoes, tomato paste, tomato sauce, and beef broth. Add the paprika, oregano, basil, cayenne pepper (if using), salt, and pepper. Stir to combine and bring the mixture to a simmer.
  4. Add the Pasta:
    Add the uncooked elbow macaroni (or your choice of pasta) to the pot. Stir to combine, ensuring the pasta is covered with the sauce. Cover the pot and let it simmer for about 10-12 minutes, or until the pasta is cooked al dente. Stir occasionally to prevent the pasta from sticking to the bottom.
  5. Adjust the Consistency:
    If the goulash becomes too thick, you can add a little more broth or water to reach your desired consistency. Taste and adjust the seasoning with more salt, pepper, or spices as needed.
  6. Garnish and Serve:
    Once the pasta is cooked and everything is well combined, serve the goulash hot. Top with shredded cheddar cheese and fresh herbs like parsley or basil, if desired.
