4 cups watermelon, cubed or balled

1 large cucumber, thinly sliced or diced (English cucumber works well)

1/4 red onion, thinly sliced (optional)

1/2 cup feta cheese, crumbled

2–3 tablespoons fresh mint or basil, chopped

Juice of 1 lime or 2 tablespoons lemon juice

🥣 Instructions:

Prep the produce:
Cut watermelon and cucumber into bite-sized pieces. Thinly slice red onion if using. -
Mix:
In a large bowl, gently toss together the watermelon, cucumber, onion, and herbs. -
Dress it:

Add feta last:
