Turkey Zucchini Skillet

Here’s a healthy, quick, and flavorful one-pan meal: the Turkey Zucchini Skillet. It’s low-carb, high-protein, and perfect for busy weeknights. Packed with lean ground turkey, fresh zucchini, and savory spices, this dish is both satisfying and simple to make.


🥘 Turkey Zucchini Skillet

🧺 Ingredients (Serves 4)

  • 1 lb (450g) lean ground turkey

  • 2 medium zucchini, diced or sliced

  • 1 small onion, chopped

  • 2–3 cloves garlic, minced

  • 1 can (14.5 oz) diced tomatoes, drained (or use fresh diced tomatoes)

  • 1 tsp Italian seasoning

  • ½ tsp paprika

  • Salt and pepper, to taste

  • 1–2 tbsp olive oil

  • Optional: ½ cup shredded Parmesan or mozzarella cheese

  • Optional garnish: fresh basil or parsley


👩‍🍳 Instructions

  1. Sauté the turkey:

    • In a large skillet over medium heat, add olive oil.

    • Add ground turkey and cook until browned, breaking it up as it cooks (about 5–7 minutes). Season with salt, pepper, and paprika.

    • Remove excess fat if needed.

  2. Add veggies:

    • Stir in chopped onion and garlic. Cook 2–3 minutes until softened.

    • Add zucchini and Italian seasoning. Cook for another 5–7 minutes, stirring occasionally, until zucchini is tender but not mushy.

  3. Add tomatoes:

    • Stir in drained diced tomatoes.

    • Simmer for 5–10 minutes, allowing flavors to blend and liquid to reduce slightly.

  4. Finish and serve:

    • Taste and adjust seasoning. Sprinkle with cheese if using, and cover until it melts.

    • Garnish with fresh herbs and serve hot.


🍽️ Serving Suggestions:

  • Serve over rice, quinoa, or cauliflower rice

  • Pair with a side salad or garlic toast

  • Use leftovers in wraps or stuff into bell peppers

  • Add mushrooms, spinach, or bell peppers for extra veggies

  • Use ground chicken or beef instead of turkey

  • Spice it up with red pepper flakes or chili powder
