  • For the Coleslaw:
    • 1 medium head of green cabbage (about 6-7 cups shredded)
    • 1 medium carrot, peeled and grated
    • 1/4 cup finely chopped onion (optional)
  • For the Dressing:
    • 1 cup mayonnaise
    • 1/4 cup buttermilk (or regular milk if you don’t have buttermilk)
    • 1 tablespoon apple cider vinegar
    • 2 tablespoons lemon juice
    • 1/4 cup granulated sugar
    • 1/2 teaspoon salt (adjust to taste)
    • 1/4 teaspoon black pepper
    • 1/4 teaspoon celery seed (optional, but recommended for flavor)
    • 1/4 teaspoon mustard powder (optional)

  1. Prepare the Vegetables:
    • Finely shred the cabbage using a sharp knife, mandolin slicer, or a food processor. You want the pieces to be small and uniform. Place the shredded cabbage in a large mixing bowl.
    • Grate the carrot using a box grater or food processor. Add the grated carrot to the cabbage in the mixing bowl.
    • If you’re using onion, finely chop it and add it to the bowl. (This is optional but adds an extra bit of flavor.)
  2. Make the Dressing:
    • In a separate bowl, combine the mayonnaise, buttermilk, apple cider vinegar, lemon juice, sugar, salt, black pepper, celery seed, and mustard powder (if using).
    • Whisk everything together until the dressing is smooth and well-combined.
  3. Toss the Coleslaw:
    • Pour the dressing over the shredded cabbage and carrots mixture. Stir well to coat all the vegetables evenly with the dressing. The mixture should be creamy and well-mixed.
  4. Refrigerate:
    • Cover the bowl with plastic wrap and refrigerate the coleslaw for at least 1 hour, preferably 3-4 hours, or overnight. This helps the flavors meld together and allows the cabbage to soften slightly.
  5. Serve:
    • Once chilled, give the coleslaw a quick stir, and it’s ready to serve! It’s perfect as a side dish to fried chicken, sandwiches, or BBQ.

Tips:

  • Consistency: If you prefer a thicker coleslaw, reduce the amount of buttermilk or add a bit more mayo.
  • Sweetness: Adjust the sugar based on your taste. Some people prefer a sweeter coleslaw, so feel free to add a bit more sugar if you’d like.
  • Add-ins: While KFC’s coleslaw is simple, you can add a small amount of finely chopped green pepper or parsley for a slight variation.
