Here’s a simple and delicious recipe for Teriyaki Chicken and Broccoli—a savory, sweet dish that’s packed with flavor and perfect for a quick meal.

Teriyaki Chicken and Broccoli

Ingredients:

  • For the Chicken:

    • 4 boneless, skinless chicken breasts (or thighs)
    • 2 tbsp olive oil (or vegetable oil)
    • Salt and pepper to taste
  • For the Teriyaki Sauce:

    • 1/2 cup soy sauce (low-sodium preferred)
    • 1/4 cup honey (or brown sugar)
    • 1/4 cup rice vinegar
    • 2 tbsp water
    • 2 tbsp grated ginger (or 1 tsp ground ginger)
    • 2 cloves garlic, minced
    • 1 tbsp cornstarch (optional, for thickening)
    • 1 tbsp sesame oil (optional, for flavor)
  • For the Broccoli:

    • 2 cups broccoli florets (fresh or frozen)
    • 1 tbsp olive oil or butter
    • Salt and pepper to taste

Instructions:

  1. Cook the Chicken:

    • Season the chicken breasts with salt and pepper on both sides.
    • Heat the olive oil in a large skillet or pan over medium-high heat.
    • Add the chicken and cook for 6-7 minutes per side, or until golden brown and cooked through (the internal temperature should be 165°F or 74°C). Remove the chicken from the pan and set aside to rest.
  2. Make the Teriyaki Sauce:

    • In a small saucepan, combine the soy sauce, honey, rice vinegar, water, grated ginger, garlic, and sesame oil (if using).
    • Bring to a simmer over medium heat, stirring occasionally.
    • If you prefer a thicker sauce, dissolve the cornstarch in a little cold water and stir it into the sauce. Let the sauce simmer for 2-3 more minutes until it thickens slightly.
    • Taste and adjust the seasoning if necessary (you can add more honey for sweetness or more soy sauce for saltiness).
    • Remove from heat and set aside.
  3. Cook the Broccoli:

    • While the chicken is cooking, steam or sauté the broccoli. To sauté, heat the olive oil or butter in a separate pan over medium heat. Add the broccoli and cook for 4-5 minutes, stirring occasionally, until tender and slightly browned. Season with salt and pepper to taste.
  4. Assemble the Dish:

    • Slice the cooked chicken breasts into thin strips.
    • Drizzle the teriyaki sauce over the chicken.
    • Serve the chicken over the cooked broccoli, and drizzle more teriyaki sauce on top if desired.
  5. Serve:

    • Serve your Teriyaki Chicken and Broccoli with steamed rice or quinoa for a complete meal. Garnish with sesame seeds or green onions if desired.
