Here’s a hearty and satisfying Tater Tot Breakfast Bowl with Sausage Gravy recipe that’s perfect for breakfast, brunch, or even dinner.


🥣 Tater Tot Breakfast Bowl with Sausage Gravy

🍳 Ingredients

For the bowl:

  • 4 cups frozen tater tots
  • 4 large eggs
  • 1 tbsp butter or oil
  • Salt & pepper, to taste
  • 1 cup shredded cheddar cheese (optional)
  • 2 green onions, sliced (optional, for garnish)

For the sausage gravy:

  • 1/2 pound breakfast sausage (pork or turkey)
  • 2 tbsp all-purpose flour
  • 1 1/4 cups milk (whole milk preferred)
  • Salt & black pepper, to taste
  • Optional: pinch of crushed red pepper or paprika for a kick

👨‍🍳 Instructions

  1. Bake the Tater Tots
    • Preheat oven to 425°F (220°C).
    • Spread tater tots on a baking sheet in a single layer.
    • Bake for 20–25 minutes or until crispy and golden brown.
  2. Make the Sausage Gravy
    • In a skillet over medium heat, cook sausage until browned and cooked through. Break it up as it cooks.
    • Sprinkle flour over the sausage, stir, and cook for 1–2 minutes to eliminate the raw flour taste.
    • Gradually whisk in milk, stirring constantly to prevent lumps.
    • Simmer until thickened (about 4–6 minutes). Season with salt and pepper to taste. Keep warm.
  3. Cook the Eggs
    • While the gravy simmers, cook eggs to your preference (fried, scrambled, or poached).
    • Season lightly with salt and pepper.
  4. Assemble the Bowl
    • Place a generous serving of tater tots at the bottom of each bowl.
    • Spoon sausage gravy over the tots.
    • Top with cooked eggs.
    • Sprinkle with shredded cheese and green onions, if desired.

  • Add veggies: sautéed bell peppers, onions, or spinach.
  • Swap protein: use bacon or plant-based sausage.
  • Make it spicy: top with jalapeños or a dash of hot sauce.
