Tasty Seafood Soup with Crab and Shrimp

Here’s a delicious and easy recipe for a Tasty Seafood Soup with Crab and Shrimp:

Ingredients:

  • 1 lb shrimp (peeled and deveined)
  • 1 lb crab meat (or crab legs, or imitation crab if preferred)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil or butter
  • 1 large tomato (chopped)
  • 4 cups seafood stock (or chicken stock)
  • 1 cup heavy cream (or coconut milk for a dairy-free version)
  • 1 cup white wine (optional, but it adds great depth of flavor)
  • 1 teaspoon Old Bay seasoning (or seafood seasoning)
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 bay leaf
  • Fresh parsley (for garnish)
  • 1/2 cup corn kernels (optional for added texture)
  • 1/2 cup carrots (chopped)
  • 1 cup potatoes (cubed, optional)

Instructions:

  1. Prepare the Ingredients:

    • If using crab legs, crack them and remove the meat. If you’re using imitation crab, just break it into pieces.
    • Peel and devein the shrimp if they’re not prepped.
  2. Cook the Vegetables:

    • In a large pot or Dutch oven, heat the olive oil or butter over medium heat.
    • Add the chopped onion and garlic, sautéing until fragrant and softened, about 3-4 minutes.
    • Add the chopped tomato, carrots, and potatoes (if using) and cook for another 3-5 minutes until they start to soften.
  3. Add the Liquid:

    • Pour in the seafood stock and white wine (if using), and bring the mixture to a simmer.
    • Stir in the Old Bay seasoning, paprika, thyme, bay leaf, and a pinch of salt and pepper.
    • Let it simmer for about 10-15 minutes, or until the vegetables are tender.
  4. Add the Seafood:

    • Add the shrimp and crab meat to the pot. Stir gently, and simmer for about 5-7 minutes or until the shrimp is pink and opaque.
  5. Finish the Soup:

    • Pour in the heavy cream (or coconut milk) and stir. Allow it to heat through, about 3-5 minutes.
    • Taste and adjust seasoning with more salt, pepper, or Old Bay seasoning if needed.
  6. Serve:

    • Remove the bay leaf before serving.
    • Garnish with freshly chopped parsley for a burst of freshness.
  7. Optional Additions:

    • For a bit of a kick, you can add a dash of hot sauce or a pinch of cayenne pepper.
    • Serve the soup with crusty bread on the side for dipping.
