Taco Lasagna Recipe

Taco Lasagna combines the flavors of a classic taco with the comfort of a lasagna, making it a fun, delicious, and satisfying dish! It’s layered with seasoned meat, cheese, tortillas, and all the taco fixings. Here’s an easy recipe:

Ingredients:

For the Meat Mixture:

  • 1 lb ground beef (or ground turkey)
  • 1 small onion, diced
  • 1 packet taco seasoning (or homemade seasoning mix)
  • 1 can (10 oz) diced tomatoes with green chilies (like Ro*tel), drained
  • 1 can (4 oz) green chilies (optional, for extra flavor)
  • 1 cup sour cream (optional, for creaminess)

For the Lasagna Layers:

  • 8-10 flour tortillas (or corn tortillas, depending on your preference)
  • 2 cups shredded cheddar cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup refried beans (optional, for an extra layer of flavor)
  • 1 cup salsa (optional for extra flavor and moisture)

Toppings (optional):

  • Sliced green onions
  • Sour cream
  • Chopped cilantro
  • Lettuce (shredded)
  • Sliced jalapeños
  • Salsa or guacamole

Instructions:

1. Prepare the Meat Mixture:

  • In a large skillet, cook the ground beef (or turkey) over medium heat until browned and fully cooked, breaking it up as it cooks.
  • Add the diced onion and cook until softened, about 3-4 minutes.
  • Stir in the taco seasoning, diced tomatoes, and green chilies. Cook for an additional 2-3 minutes, allowing the flavors to meld. If you want a creamier texture, stir in sour cream.
  • Remove from heat and set aside.

2. Prepare the Lasagna Layers:

  • Preheat your oven to 375°F (190°C).
  • Lightly grease a 9×13-inch baking dish.
  • Start by layering the bottom of the dish with 2-3 flour tortillas (you may need to trim some tortillas to fit the shape of the dish).
  • Spread a thin layer of refried beans (if using) on top of the tortillas, followed by a portion of the meat mixture. Then sprinkle with a bit of the cheddar and mozzarella cheese.

3. Build the Layers:

  • Add another layer of tortillas, then top with more of the meat mixture and cheeses. Repeat the layers until you’ve used up all the ingredients (usually 3-4 layers of tortillas). Make sure the top layer is cheese!

4. Bake the Taco Lasagna:

  • Cover the baking dish with aluminum foil and bake for 25 minutes.
  • After 25 minutes, remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly and the edges are golden.

5. Serve:

  • Let the lasagna rest for about 5 minutes before slicing and serving.
  • Top with fresh sour cream, salsa, green onions, chopped cilantro, and any other desired taco toppings.

Tips:

  • Variation: Add a layer of sautéed bell peppers or corn kernels for extra flavor and texture.
  • Spicy version: Add chopped jalapeños or use a spicy salsa to kick up the heat.
  • Make ahead: You can assemble the Taco Lasagna a day ahead and store it in the refrigerator, then bake it when you’re ready to serve.
