Ingredients:

  • For the Sweet Potato Layer:

    • 2 medium-sized sweet potatoes, peeled and boiled
    • 1 tablespoon butter
    • Salt and pepper to taste
    • 1/4 teaspoon ground nutmeg or cinnamon (optional, for added flavor)
  • For the Minced Meat Filling:

    • 500g minced beef (or any meat of choice)
    • 1 medium onion, finely chopped
    • 2 cloves garlic, minced
    • 1/2 bell pepper, chopped (optional)
    • 1 teaspoon ground cumin (or any spice blend of your choice)
    • Salt and pepper to taste
    • Olive oil for sautéing
    • 1 tablespoon tomato paste or chopped tomatoes (optional)
  • For the Assembly:

    • 1 egg (to help bind the layers)
    • 1/4 cup grated cheese (optional, for a cheesy finish)
    • Fresh herbs for garnish (optional)

Instructions:

  1. Prepare the Sweet Potato Layer:

    • Boil the sweet potatoes until tender (about 15-20 minutes). Drain and mash them with butter, salt, pepper, and any spices you’d like to add.
    • Set the mashed sweet potatoes aside to cool a bit.
  2. Cook the Minced Meat Filling:

    • In a large skillet, heat a little olive oil and sauté the onions and garlic until softened.
    • Add the minced meat and cook until browned. If you’re using tomato paste, add it in and cook for a few more minutes until the mixture thickens.
    • Season with salt, pepper, and spices, and stir in the bell pepper (if using) for some extra flavor and texture. Let it cook for about 5 minutes. Remove from heat.
  3. Assemble the Rocambole:

    • On a large piece of parchment paper or plastic wrap, spread the mashed sweet potatoes evenly into a rectangular shape.
    • Spread the minced meat mixture over the mashed sweet potatoes.
    • Carefully roll up the sweet potatoes and meat, using the parchment or plastic wrap to help guide the rolling process.
    • Place the roll in a baking dish, seam side down.
  4. Bake and Serve:

    • Preheat your oven to 180°C (350°F).
    • Brush the top of the rocambole with a bit of olive oil or beaten egg for a nice golden finish.
    • Bake for about 20 minutes, or until the top is golden and the filling is heated through.
    • Optional: Sprinkle with grated cheese during the last 5 minutes of baking for a cheesy crust.
  5. Garnish and Serve:

    • Once baked, let the rocambole rest for a few minutes before slicing. Garnish with fresh herbs, if desired, and serve hot.
