Strawberry Lemonade Loaf
Ingredients:
For the loaf:

1 1/2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/4 cup fresh lemon juice

Zest of 1 lemon

1/2 cup sour cream (or Greek yogurt)

1/2 cup strawberry puree (blend fresh or frozen strawberries to make a smooth puree)
For the glaze:

1 cup powdered sugar

2 tablespoons fresh lemon juice

1 tablespoon strawberry puree (optional for extra strawberry flavor)
Instructions:

Prepare the oven and loaf pan:

Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan, or line it with parchment paper for easy removal.

Make the batter:

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a large bowl, beat together the softened butter and granulated sugar until light and fluffy (about 3-4 minutes).

Add the eggs one at a time, beating well after each addition. Then mix in the vanilla extract, lemon juice, and lemon zest.

Add half of the dry ingredients to the wet ingredients and mix until combined. Stir in the sour cream and strawberry puree.

Add the remaining dry ingredients and mix until just combined. Be careful not to overmix.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 55-65 minutes, or until a toothpick inserted into the center of the loaf comes out clean. If the top starts to brown too quickly, you can cover it with foil for the last 10-15 minutes.

Let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

In a small bowl, whisk together the powdered sugar, lemon juice, and strawberry puree until smooth.
