“STRAWBERRY CHEESECAKE STUFFED COOKIES

Oh yes, Strawberry Cheesecake Stuffed Cookies sound absolutely divine! Here’s a simple recipe to make these soft, creamy, and fruity treats:


🍓🍪 Strawberry Cheesecake Stuffed Cookies

Servings: About 12 large cookies

Prep Time: 20 min | Bake Time: 12–15 min


Ingredients:

For the Cookie Dough:

  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 1/2 cups (315g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

For the Strawberry Cheesecake Filling:

  • 8 oz (225g) cream cheese, softened
  • 1/3 cup (40g) powdered sugar
  • 1/2 cup (75g) fresh strawberries, finely chopped
  • 1 tsp lemon juice (optional, for brightness)

Instructions:

  1. Prepare the Filling:
    In a bowl, beat the cream cheese and powdered sugar until smooth and creamy. Gently fold in chopped strawberries and lemon juice if using. Refrigerate while you make the cookie dough.
  2. Make the Cookie Dough:
    In a large bowl, cream together butter, granulated sugar, and brown sugar until fluffy.
    Add eggs one at a time, mixing well. Stir in vanilla extract.
    In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to wet ingredients until just combined.
  3. Assemble Cookies:
    Preheat oven to 350°F (175°C).
    Scoop about 2 tablespoons of cookie dough and flatten it slightly in your hand. Place about 1 tablespoon of cheesecake filling in the center, then fold cookie dough around it and seal completely. Roll gently into a ball.
    Place on a parchment-lined baking sheet, spacing about 2 inches apart.
  4. Bake:
    Bake for 12–15 minutes or until edges are golden but centers still look slightly soft.
    Let cool on baking sheet for 5 minutes, then transfer to wire rack to cool completely.

Tips:

  • For extra strawberry flavor, add a few freeze-dried strawberry bits to the filling or dough.
  • If you want a fruitier twist, swap strawberries with raspberries or blueberries!
  • Serve chilled or at room temperature for best creamy texture.
