Here’s a super tasty and easy recipe for Spinach and Cheese Puff Pastry Squares — golden, flaky, and filled with creamy, cheesy spinach. Perfect as a snack, appetizer, or light meal.


🧀🌿 Spinach and Cheese Puff Pastry Squares

✅ Ingredients (Makes about 9 squares)

  • 1 sheet puff pastry (thawed if frozen)
  • 1 cup cooked spinach (fresh or frozen, well-drained and chopped)
  • ½ cup ricotta cheese (or cottage cheese)
  • ½ cup shredded mozzarella (or cheddar/feta for extra flavor)
  • 1 egg (for brushing and binding)
  • 1 garlic clove, minced (optional)
  • Salt & pepper, to taste
  • Pinch of nutmeg (optional but adds warmth)
  • Sesame seeds or grated Parmesan (optional topping)

🥣 Instructions

  1. Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.
  2. Make the filling:
    In a bowl, mix together:

    • Cooked spinach (squeeze out all excess water if using frozen)
    • Ricotta
    • Mozzarella
    • Half the beaten egg (reserve the rest for brushing)
    • Garlic (if using), salt, pepper, and nutmeg
  3. Prepare the pastry:
    • Roll out the puff pastry sheet slightly on a floured surface.
    • Cut into 9 equal squares (3×3 grid).
    • Place a spoonful of filling in the center of each square.
  4. Fold (optional):
    • You can leave them open-faced, or fold over into triangles/rectangles and press edges with a fork.
    • For open squares, gently pinch or fold the edges up a bit to keep filling in place.
  5. Brush with egg wash:
    • Brush the tops/edges with the remaining beaten egg.
    • Sprinkle sesame seeds or Parmesan if desired.
  6. Bake for 15–20 minutes or until golden and puffed.
  7. Cool slightly and serve warm or at room temp.

📝 Tips & Variations

  • Use feta cheese for a saltier, Greek-style twist.
  • Add finely chopped onion or mushrooms sautéed in olive oil for more flavor.
  • Serve with yogurt dip or tomato relish for extra flair.
