🐟 Spiced Salmon with Cheesy Asparagus & Garlic Herb Potatoes

Serves: 4 | Prep Time: 15 min | Cook Time: 30–35 min


🛒 Ingredients

For the Spiced Salmon:

  • 4 salmon fillets (6 oz each), skin on or off
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp cumin
  • ½ tsp chili powder (optional, for heat)
  • Salt & pepper, to taste
  • Lemon wedges (for serving)

For the Cheesy Asparagus:

  • 1 lb fresh asparagus, trimmed
  • 1 tbsp olive oil
  • Salt & pepper, to taste
  • ½ cup shredded cheddar or Parmesan cheese
  • 1 clove garlic, minced

For the Garlic Herb Potatoes:

  • 1.5 lbs baby potatoes, halved or quartered
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried rosemary or thyme (or fresh herbs)
  • Salt & pepper, to taste
  • Optional: chopped parsley for garnish

👩‍🍳 Instructions

1. Prep the Potatoes:

  • Preheat oven to 425°F (220°C).
  • Toss potatoes with olive oil, minced garlic, rosemary, salt, and pepper on a baking sheet.
  • Roast for 20 minutes.

2. Add the Asparagus:

  • After 20 minutes, toss asparagus with olive oil, garlic, salt, and pepper.
  • Spread asparagus on the baking sheet with potatoes.
  • Sprinkle cheese over the asparagus.
  • Roast for another 10–12 minutes until potatoes are tender and asparagus is cooked.

3. Prepare the Salmon:

  • While veggies roast, mix paprika, garlic powder, cumin, chili powder, salt, and pepper in a small bowl.
  • Rub olive oil and spice mix evenly over salmon fillets.

4. Cook the Salmon:

  • Heat a large oven-safe skillet over medium-high heat.
  • Sear salmon, skin-side down, for 3–4 minutes until crispy.
  • Flip and cook another 2 minutes.
  • Transfer skillet to oven (or place salmon on a baking sheet) and roast at 425°F (220°C) for 5–7 minutes or until cooked to your liking.

5. Serve:

  • Plate salmon with cheesy asparagus and garlic herb potatoes.
  • Garnish with lemon wedges and chopped parsley.

📝 Tips & Variations

  • Swap cheddar for mozzarella or feta on asparagus.
  • Use sweet potatoes or Yukon gold for potatoes.
  • Add a squeeze of fresh lemon juice over salmon just before serving for extra brightness.
