Soft Apple Cake

Here’s a cozy and moist Soft Apple Cake recipe — perfect for fall (or anytime!) with tender apple chunks, a hint of cinnamon, and a soft, buttery crumb. It’s easy to make and delicious warm or chilled, plain or glazed.


🍎 Soft Apple Cake Recipe

🛒 Ingredients (Serves 8–10)

  • 1½ cups (190g) all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 tsp cinnamon (optional: pinch of nutmeg)

  • ½ cup (1 stick) unsalted butter, melted and slightly cooled

  • ¾ cup (150g) granulated sugar

  • 2 large eggs

  • ½ cup (120ml) plain yogurt, sour cream, or buttermilk

  • 1 tsp vanilla extract

  • 2 medium apples, peeled and chopped (about 1½ cups)

Optional topping:

  • 1 tbsp coarse sugar or cinnamon sugar

  • Glaze (see below)


👨‍🍳 Instructions

1. Preheat and Prep

  • Preheat oven to 350°F (175°C).

  • Grease and flour an 8-inch round or square cake pan (or line with parchment paper).

2. Mix Dry Ingredients

  • In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg (if using).

3. Mix Wet Ingredients

  • In another large bowl, whisk melted butter and sugar until smooth.

  • Add eggs one at a time, then stir in yogurt (or buttermilk) and vanilla.

4. Combine

  • Add dry ingredients to wet and stir until just combined.

  • Fold in chopped apples (don’t overmix).

5. Bake

  • Pour batter into prepared pan and smooth the top.

  • Sprinkle with coarse sugar or cinnamon sugar if using.

  • Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.

6. Cool and Serve

  • Let cool for 10–15 minutes before slicing.

  • Serve warm or at room temperature.


🍯 Optional Glaze

Mix:

  • ½ cup powdered sugar

  • 1–2 tbsp milk or lemon juice

  • ¼ tsp vanilla (optional)

Drizzle over the cooled cake.


🧊 Storage

  • Keeps well at room temperature (covered) for 2–3 days.

  • Refrigerate for up to 5 days.

  • Freezes well in slices (wrap tightly).
