Here’s a Smothered Baked Chicken Burritos recipe that’s hearty, flavorful, and perfect for a cozy dinner or feeding a hungry crowd. These burritos are stuffed with seasoned chicken, rice, beans, cheese, and baked to perfection under a rich, smothered sauce.

Ingredients

For the Burritos:

  • 2 cups cooked chicken, shredded (rotisserie works great)

  • 1 cup cooked rice (Mexican rice or plain)

  • 1 cup canned black beans, drained and rinsed

  • 1 cup shredded cheddar or Monterey Jack cheese

  • 1/2 cup sour cream or Greek yogurt

  • 1/2 teaspoon cumin

  • 1/2 teaspoon chili powder

  • 1/2 teaspoon garlic powder

  • Salt and pepper, to taste

  • 5–6 large flour tortillas

For the Smothered Sauce:

  • 2 tablespoons butter

  • 2 tablespoons flour

  • 2 cups chicken broth

  • 1/2 cup sour cream

  • 1 (4 oz) can diced green chilies (mild or hot)

  • 1/2 teaspoon cumin

  • 1/2 teaspoon garlic powder

  • Salt, to taste

Toppings (Optional):

  • Chopped cilantro

  • Diced tomatoes

  • Extra cheese

  • Jalapeños

  • Avocado or guacamole


Instructions

1. Preheat Oven

Preheat your oven to 375°F (190°C) and lightly grease a 9×13 baking dish.

2. Make the Filling

In a large bowl, combine:

  • Shredded chicken

  • Cooked rice

  • Black beans

  • Cheese

  • Sour cream

  • Spices (cumin, chili powder, garlic powder, salt, pepper)

Mix until well blended.

3. Assemble the Burritos

  • Place about 3/4 cup of filling in the center of each tortilla.

  • Roll tightly like a burrito (fold sides in, then roll from bottom up).

  • Place seam side down in the prepared baking dish.

4. Make the Smothered Sauce

In a saucepan over medium heat:

  • Melt butter, stir in flour, and whisk to form a roux (1 minute).

  • Slowly whisk in chicken broth, simmer until thickened (3–5 minutes).

  • Stir in sour cream, green chilies, and seasonings.

  • Remove from heat and taste for salt.

5. Smother & Bake

  • Pour the sauce evenly over the burritos.

  • Sprinkle extra cheese on top (optional).

  • Cover with foil and bake for 20 minutes.

  • Remove foil and bake uncovered for another 10 minutes or until bubbly and golden.

6. Garnish & Serve

Top with fresh cilantro, diced tomatoes, or your favorite toppings. Serve hot with a side of salsa, guacamole, or a simple salad.
