β Ingredients (Serves 2β3)
- 1 lb (450g) shrimp, peeled & deveined (tail on or off)
- 1 bunch asparagus, trimmed & cut into 2-inch pieces
- 1 cup mushrooms, sliced (shiitake, cremini, or button)
- 3 cloves garlic, minced
- 1-inch piece fresh ginger, grated (or 1 tsp ground ginger)
- 2 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp oyster sauce (optional, for richness)
- 1 tsp sesame oil
- 1 tbsp cooking oil (avocado, vegetable, or olive oil)
- 1 tsp cornstarch + 2 tbsp water (optional, for thickening sauce)
- Crushed red pepper flakes (optional for heat)
- Sesame seeds & green onions, for garnish
π³ Instructions
- Prep all ingredients first β stir-fries cook fast!
- In a small bowl, mix soy sauce, oyster sauce, sesame oil, and cornstarch slurry (if using). Set aside.
- Heat a large pan or wok over medium-high heat. Add oil.
- Add shrimp and cook for 2β3 minutes until pink and just cooked through. Remove and set aside.
- In the same pan, add a bit more oil if needed. SautΓ© garlic and ginger for 30 seconds until fragrant.
- Add mushrooms and cook 2β3 minutes until they begin to brown and soften.
- Toss in asparagus, stir-fry for 2β4 minutes until crisp-tender.
- Return shrimp to the pan. Pour in the sauce. Stir well to coat and cook for another 1β2 minutes, until everything is glossy and hot.
- Garnish with green onions, sesame seeds, and optional chili flakes.
