βœ… Ingredients (Serves 2–3)

  • 1 lb (450g) shrimp, peeled & deveined (tail on or off)
  • 1 bunch asparagus, trimmed & cut into 2-inch pieces
  • 1 cup mushrooms, sliced (shiitake, cremini, or button)
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, grated (or 1 tsp ground ginger)
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp oyster sauce (optional, for richness)
  • 1 tsp sesame oil
  • 1 tbsp cooking oil (avocado, vegetable, or olive oil)
  • 1 tsp cornstarch + 2 tbsp water (optional, for thickening sauce)
  • Crushed red pepper flakes (optional for heat)
  • Sesame seeds & green onions, for garnish

🍳 Instructions

  1. Prep all ingredients first – stir-fries cook fast!
  2. In a small bowl, mix soy sauce, oyster sauce, sesame oil, and cornstarch slurry (if using). Set aside.
  3. Heat a large pan or wok over medium-high heat. Add oil.
  4. Add shrimp and cook for 2–3 minutes until pink and just cooked through. Remove and set aside.
  5. In the same pan, add a bit more oil if needed. SautΓ© garlic and ginger for 30 seconds until fragrant.
  6. Add mushrooms and cook 2–3 minutes until they begin to brown and soften.
  7. Toss in asparagus, stir-fry for 2–4 minutes until crisp-tender.
  8. Return shrimp to the pan. Pour in the sauce. Stir well to coat and cook for another 1–2 minutes, until everything is glossy and hot.
  9. Garnish with green onions, sesame seeds, and optional chili flakes.

🍚 Serving Ideas

  • Serve over steamed rice, quinoa, or cauliflower rice
  • Add noodles for a heartier meal
  • Enjoy on its own for a light, low-carb dinner
