Sausage Casserole
Ingredients
- 8 pork sausages (or your favorite type)
- 2 tablespoons olive oil
- 1 large onion, sliced

- 1 red bell pepper, chopped
- 1 can (400g/14oz) chopped tomatoes
- 1 cup chicken or vegetable stock

- 1 bay leaf

Instructions
Step 1: Brown the sausages
- Heat olive oil in a large ovenproof casserole dish or skillet over medium-high heat.
- Add sausages and brown on all sides (about 5-7 minutes). Remove and set aside.
