Here’s a recipe for Refreshing Mint Chocolate Oreo Bars—a cool, creamy, and decadent treat that’s perfect for warm days or when you’re craving something chocolatey with a minty twist:


🍃 Refreshing Mint Chocolate Oreo Bars

Ingredients

For the crust:

  • 24 Oreo cookies (regular or mint)
  • 5 tbsp unsalted butter, melted

For the mint layer:

  • 1 (8 oz) package cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 tsp peppermint extract (more to taste)
  • Green food coloring (optional)
  • 1 cup heavy whipping cream (or 1 tub Cool Whip)

For the chocolate topping:

  • 1 1/2 cups semi-sweet chocolate chips
  • 3 tbsp butter or heavy cream

Optional toppings:

  • Crushed Oreos
  • Mini chocolate chips
  • Andes mint bits

Instructions

  1. Make the crust:
    • Finely crush the Oreos in a food processor (or in a ziplock bag with a rolling pin).
    • Mix with melted butter until combined.
    • Press into an 8×8 or 9×9 inch pan lined with parchment paper.
    • Chill in the fridge for at least 20 minutes.
  2. Prepare the mint layer:
    • Beat cream cheese and powdered sugar until smooth.
    • Add peppermint extract and a few drops of green food coloring if using.
    • In a separate bowl, whip the cream until stiff peaks form, then gently fold into the cream cheese mixture (or fold in Cool Whip).
    • Spread evenly over the chilled crust.
  3. Make the chocolate topping:
    • Melt chocolate chips with butter or cream in a double boiler or microwave in short bursts, stirring until smooth.
    • Let cool slightly, then pour over the mint layer and smooth out.
  4. Chill & serve:
    • Refrigerate the bars for at least 2–3 hours, or until firm.
    • Top with crushed Oreos or mint chips before serving if desired.
    • Slice into bars and enjoy!

Tips:

  • Use mint Oreos for extra minty flavor.
  • Substitute white chocolate chips for the topping for a different twist.
  • Store in the fridge for up to 5 days or freeze for longer storage.
