- 1 lb (450g) ground beef
- 1/2 small onion, finely chopped
- 1 tsp garlic powder
- 1/2 tsp Italian seasoning
- Salt & pepper to taste
- 1 ½ cups pizza sauce (or marinara)
- 1 ½ cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese (optional)
- 6–8 flour tortillas (8-inch size)
- Optional fillings: mini pepperoni, sliced olives, chopped mushrooms, green peppers
- Optional toppings: fresh basil, red pepper flakes, more mozzarella
🔪 Instructions:
- Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- Cook the beef:
- In a skillet over medium heat, cook ground beef and onions until browned and cooked through.
- Drain excess fat.
- Stir in garlic powder, Italian seasoning, salt, pepper, and 3/4 cup pizza sauce.
- Cook 1–2 more minutes until combined. Set aside to cool slightly.
- Assemble the enchiladas:
- Spread a few spoonfuls of pizza sauce over the bottom of your baking dish.
- Spoon about 2–3 tbsp of the beef mixture down the center of each tortilla.
- Add a sprinkle of mozzarella and any optional fillings.
- Roll up tightly and place seam-side down in the baking dish.
- Top it off:
- Pour remaining pizza sauce over the enchiladas.
- Sprinkle with mozzarella, Parmesan, and any desired toppings (pepperoni, olives, etc.).
- Bake:
- Cover with foil and bake for 20 minutes.
- Uncover and bake another 5–10 minutes, until cheese is melted and bubbly.
- Serve:
