Pineapple Sausage Bites

Pineapple Sausage Bites are a sweet, savory, and incredibly easy appetizer—perfect for parties, game days, or potlucks. Here’s a simple recipe to make them:


🍍 Pineapple Sausage Bites Recipe

Ingredients:

  • 1 lb (about 450g) smoked sausage or kielbasa, sliced into bite-sized pieces
  • 1 can (20 oz) pineapple chunks, drained (reserve some juice)
  • 1/2 cup BBQ sauce (sweet or spicy—your choice)
  • 2 tbsp honey or brown sugar (optional for added sweetness)
  • Toothpicks (for serving)

Instructions:

  1. Prep:
    Slice sausage into 1/2″ thick coins. Drain pineapple chunks (set aside 2–3 tbsp of juice).
  2. Mix Sauce:
    In a small bowl, combine BBQ sauce, honey (or brown sugar), and reserved pineapple juice. Mix well.
  3. Assemble:
    Thread one pineapple chunk and one sausage slice onto each toothpick.
  4. Cook:
    • Option 1 – Oven:
      Preheat oven to 400°F (200°C). Place bites on a parchment-lined baking sheet. Brush or spoon sauce over each. Bake for 15–20 minutes, turning once and brushing with more sauce halfway through.
    • Option 2 – Skillet/Stovetop:
      Heat a large skillet over medium heat. Add sausage and pineapple pieces. Cook for 5–7 minutes until caramelized, then pour in the sauce. Simmer for 5 more minutes.
    • Option 3 – Slow Cooker:
      Toss sausage and pineapple chunks in the sauce and cook on LOW for 2–3 hours or HIGH for 1–1.5 hours.
  5. Serve:
    Transfer to a platter and serve warm with toothpicks.

🔄 Variations:

  • Use teriyaki glaze instead of BBQ for an Asian-inspired flavor.
  • Add a slice of jalapeño between sausage and pineapple for a spicy kick.
  • Substitute sausage with meatballs or chicken chunks.
