Pineapple Pound Cake

Here’s a moist and flavorful Pineapple Pound Cake that’s bursting with tropical sweetness — perfect for dessert or a special snack!


🍍 Pineapple Pound Cake

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream or Greek yogurt
  • 1 cup crushed pineapple, drained well
  • Optional: 1/2 cup chopped pecans or walnuts

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each.
  5. Mix in vanilla extract.
  6. Alternately add the flour mixture and sour cream to the butter mixture, beginning and ending with flour. Mix just until combined.
  7. Fold in crushed pineapple (and nuts if using).
  8. Pour batter into prepared pan and smooth the top.
  9. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Serving Suggestions:

  • Dust with powdered sugar or drizzle with a simple glaze made from powdered sugar and pineapple juice.
  • Serve with whipped cream or fresh fruit.
