Pineapple Cream Cheese Pie Recipe

Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup butter (melted)

For the filling:

  • 8 oz cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 can (8 oz) crushed pineapple (drained well)
  • 1 1/2 cups whipped topping (like Cool Whip)

For the topping (optional):

  • Extra whipped topping
  • Pineapple chunks or extra crushed pineapple
  • Maraschino cherries

Instructions:

  1. Make the crust:

    • Preheat your oven to 350°F (175°C).
    • In a bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until well mixed.
    • Press the mixture into the bottom of a pie dish or tart pan to form the crust.
    • Bake the crust for 8-10 minutes until lightly golden. Remove from the oven and let it cool completely.
  2. Prepare the filling:

    • In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
    • Add the powdered sugar and vanilla extract, and continue to mix until well incorporated.
    • Fold in the drained crushed pineapple. Make sure to drain the pineapple thoroughly so the filling doesn’t get too watery.
    • Gently fold in the whipped topping until everything is well combined.
  3. Assemble the pie:

    • Spoon the cream cheese filling into the cooled graham cracker crust.
    • Smooth the top with a spatula to make it even.
  4. Chill:

    • Refrigerate the pie for at least 4 hours, or preferably overnight, to allow it to set properly.
  5. Optional Topping:

    • Before serving, you can top the pie with more whipped topping, pineapple chunks, or a maraschino cherry for a fun, decorative touch.
  6. Serve and Enjoy!
