🍕 Pesto & Burrata Flatbread Pizza
Ingredients (Serves 2–4):
For the base:
-
2 flatbreads (naan, pita, or store-bought flatbread work well)
-
2–3 tbsp olive oil
For the toppings:
-
1/2 cup basil pesto (store-bought or homemade)
-
1–2 balls of fresh burrata cheese
-
1/2 cup cherry tomatoes, halved
-
Fresh basil leaves (for garnish)
-
Salt and pepper, to taste
-
Optional: red chili flakes, balsamic glaze, arugula
Instructions:
-
Preheat the oven:
-
Set to 400°F (200°C). Line a baking sheet with parchment paper.
-
-
Prepare the flatbread:
-
Brush each flatbread with olive oil.
-
Spread a generous layer of pesto over the top, leaving a small border around the edges.
-
-
Add tomatoes:
-
Scatter halved cherry tomatoes over the pesto. Sprinkle with salt and pepper.
-
-
Bake:
-
Bake the flatbread for 8–10 minutes, or until the edges are golden and the tomatoes are slightly roasted.
-
-
Add the burrata:
-
Remove from the oven. Tear the burrata into pieces and gently place it on the hot flatbread so it slightly melts.
-
Drizzle with a little olive oil or balsamic glaze if desired.
-
-
Garnish and serve:
-
Top with fresh basil leaves (and arugula if using).
-
Sprinkle red pepper flakes for a bit of heat.
-
🧀 Tips:
-
For a crispier base, pre-bake the flatbread for 2–3 minutes before adding toppings.
-
Use sun-dried tomatoes or caramelized onions for a gourmet twist.
-
Want protein? Add grilled chicken or prosciutto before baking.
