🥜 Peanut Butter Balls with Chocolate Rice Krispies

🍽️ What You’ll Love:

  • Chewy, peanut buttery centers

  • Crunchy, chocolatey Rice Krispies coating

  • No-bake and quick to make

  • Kid-friendly and crowd-pleasing!

🛒 Ingredients (Makes about 20 balls)

  • 1 cup creamy peanut butter

  • ½ cup powdered sugar

  • 1 tsp vanilla extract

  • 2 cups Rice Krispies cereal

  • 1 cup mini chocolate chips or chopped chocolate

  • 2 tbsp butter (optional, for smoother texture)

  • Optional: pinch of salt

👩‍🍳 Instructions

  1. Mix the Peanut Butter Base

    • In a large bowl, combine peanut butter, powdered sugar, vanilla extract, and butter (if using). Mix until smooth and well blended.

  2. Add Rice Krispies

    • Gently fold in the Rice Krispies cereal. The mixture should be sticky but firm enough to roll.

  3. Shape the Balls

    • Scoop about 1 tablespoon of the mixture and roll into balls with your hands. Place on a baking sheet lined with parchment paper.

  4. Coat with Chocolate

    • Melt the chocolate chips gently in the microwave (in 20-second bursts, stirring in between) or using a double boiler.

    • Dip each peanut butter ball into the melted chocolate, then place back on parchment paper.

    • Alternatively, roll balls in dry cocoa powder or crushed Rice Krispies for a lighter coating.

  5. Chill

    • Refrigerate the peanut butter balls for at least 30 minutes to firm up.

  6. Serve & Store

    • Keep refrigerated in an airtight container for up to 1 week.

    • Enjoy chilled or at room temperature.

💡 Tips & Variations

  • Substitute peanut butter with almond or cashew butter for a twist.

  • Add a handful of chopped nuts or mini marshmallows for extra texture.

  • Use dark, milk, or white chocolate coating as you prefer.

  • For a no-dip version, roll balls in crushed nuts, sprinkles, or shredded coconut.
