    • 1/4 cup maple syrup (plus extra for serving)

    • 1/2 tsp vanilla extract

    • 1/2 tsp salt

    • 1/2 tsp baking powder

    • 1 cup shredded cheddar cheese (optional, for added flavor)

  • For serving:

    • Additional maple syrup

    • Fresh fruit (optional)

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.

  2. Cook the sausage:

    • In a large skillet, cook the breakfast sausage over medium heat until browned and cooked through, breaking it apart into crumbles as it cooks. Drain excess fat if necessary, then set aside.

  3. Prepare the pancake batter:

    • In a medium bowl, whisk together the eggs, milk, pancake mix, maple syrup, vanilla extract, salt, and baking powder until smooth and well combined.

  4. Layer the casserole:

    • Spread the cooked sausage evenly in the bottom of the greased 9×13-inch baking dish.

    • Pour the pancake batter over the sausage, spreading it out evenly. If you’re using shredded cheese, sprinkle it on top of the batter for extra flavor.

  5. Bake:
