Here’s a super simple and festive treat: No-Bake Pumpkin Cheesecake Balls — creamy, spiced, and dipped in chocolate or coated in graham cracker crumbs. They’re like little bites of pumpkin cheesecake heaven!


🎃 No-Bake Pumpkin Cheesecake Balls


🍬 Ingredients:

  • 4 oz cream cheese, softened
  • ¼ cup pumpkin puree (not pie filling)
  • ¾ cup graham cracker crumbs (plus more for coating)
  • ½ cup powdered sugar
  • ½ tsp pumpkin pie spice
  • ¼ tsp cinnamon
  • 1 tsp vanilla extract
  • **Pinch of salt
  • Optional coating:**
    • Melted white or dark chocolate (about 8 oz)
    • Extra graham crumbs, crushed gingersnaps, or cinnamon sugar

👩‍🍳 Instructions:

  1. Mix filling:
    In a medium bowl, beat together cream cheese and pumpkin until smooth. Add powdered sugar, spices, vanilla, and salt. Mix well.
  2. Stir in graham cracker crumbs until a soft dough forms. Chill the mixture in the fridge for 30–45 minutes to firm up.
  3. Roll into balls:
    Scoop about 1 tbsp of the mixture and roll into a ball. Place on a parchment-lined tray. Repeat with remaining mixture.
  4. Chill again for at least 15 minutes before dipping or coating.
  5. Coat or dip:
    • Roll in crushed graham crackers or cinnamon sugar for a simple finish
    • Or dip in melted white or dark chocolate, then let set on parchment
  6. Chill until firm, about 15–20 minutes. Store in the fridge until ready to serve.

📝 Tips & Variations:

  • Add finely chopped pecans or mini chocolate chips to the mixture for extra texture.
  • For a tangier flavor, use whipped Greek yogurt cream cheese.
  • Want a vegan version? Use dairy-free cream cheese and chocolate.
