Mississippi Mud Potatoes Recipe

Ingredients:

  • 4-5 large russet potatoes, peeled and cut into cubes
  • 1/2 cup (1 stick) butter, melted
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese (divided)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika (optional, for a smoky flavor)
  • Salt and pepper to taste
  • 1 cup crushed cornflakes (or crushed potato chips)
  • 1/4 cup butter (for topping)

Instructions:

  1. Prepare the Potatoes:
    • Place the peeled and cubed potatoes in a large pot of salted water. Bring to a boil and cook for 10-15 minutes, or until the potatoes are tender and can be easily pierced with a fork.
    • Drain the potatoes and return them to the pot.
  2. Make the Potato Mixture:
    • Mash the cooked potatoes with a potato masher or use a hand mixer for a smoother texture.
    • Stir in the melted butter, cream of chicken soup, sour cream, 1 1/2 cups shredded cheddar cheese, Parmesan cheese, garlic powder, onion powder, smoked paprika (if using), salt, and pepper. Mix everything until well combined.
  3. Assemble the Casserole:
    • Transfer the mashed potato mixture to a greased 9×13-inch baking dish.
    • Spread it evenly in the dish.
  4. Add the Topping:
    • In a small bowl, combine the crushed cornflakes (or potato chips) with the remaining 1/2 cup shredded cheddar cheese.
    • Melt 1/4 cup butter and stir it into the cornflake/cheese mixture.
    • Sprinkle the topping evenly over the potato mixture.
  5. Bake:
    • Preheat your oven to 350°F (175°C).
    • Bake the casserole for 25-30 minutes, or until the top is golden brown and crispy.
  6. Serve:
    • Allow the casserole to cool for a few minutes before serving.
    • Garnish with chopped green onions or parsley if desired for extra flavor and color.
