Here’s a rich and indulgent Mint Chocolate Fudge Cheesecake Cake recipe that combines creamy cheesecake, chocolate fudge, and refreshing mint—all in one dessert!


Mint Chocolate Fudge Cheesecake Cake Recipe

Ingredients:

For the crust:

  • 1 ½ cups chocolate cookie crumbs (like Oreos, crushed)
  • ¼ cup unsalted butter, melted

For the mint chocolate cheesecake layer:

  • 24 oz (3 packages) cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • ½ cup sour cream
  • 1 tsp peppermint extract
  • 1 cup semi-sweet chocolate chips, melted and slightly cooled
  • Green food coloring (optional, for minty color)

For the fudge layer:

  • 1 cup heavy cream
  • 8 oz bittersweet or semi-sweet chocolate, chopped
  • 2 tbsp unsalted butter

For the topping (optional):

  • Whipped cream
  • Crushed chocolate cookies or chocolate shavings
  • Fresh mint leaves

Instructions:

  1. Prepare the crust:
    • Preheat oven to 325°F (163°C).
    • Mix chocolate cookie crumbs and melted butter until combined.
    • Press firmly into the bottom of a 9-inch springform pan.
    • Bake for 8-10 minutes, then set aside to cool.
  2. Make the mint chocolate cheesecake layer:
    • Beat the cream cheese and sugar together until smooth and creamy.
    • Add vanilla extract, peppermint extract, and sour cream; mix well.
    • Add eggs one at a time, mixing gently after each.
    • Stir in melted chocolate and a few drops of green food coloring if desired.
    • Pour the cheesecake batter over the cooled crust.
  3. Bake the cheesecake:
    • Place the springform pan on a baking sheet.
    • Bake for 50-60 minutes, or until the center is almost set (it should still jiggle slightly).
    • Turn off the oven, leave the door slightly open, and let the cheesecake cool inside for 1 hour.
    • Remove from oven, then chill in the fridge for at least 4 hours or overnight.
  4. Prepare the fudge layer:
    • Heat heavy cream in a small saucepan over medium heat until it just begins to simmer.
    • Remove from heat and add chopped chocolate and butter.
    • Let sit for 2-3 minutes, then stir until smooth and glossy.
    • Let the fudge cool slightly, then pour over the chilled cheesecake.
  5. Chill and serve:
    • Return the cake to the fridge to set the fudge layer for at least 1 hour.
    • Before serving, decorate with whipped cream, crushed cookies, chocolate shavings, and fresh mint if you like.
