Milk Loaf Cake

Here’s a simple and classic recipe for a Milk Loaf Cake a soft, moist, and subtly sweet cake that’s perfect with tea or coffee. This old-fashioned loaf has a tender crumb thanks to the milk, and it’s great on its own or with jam, butter, or a glaze.


🥛 Milk Loaf Cake

🧺 Ingredients (Makes 1 loaf)

  • 1 ½ cups (190g) all-purpose flour

  • 2 tsp baking powder

  • ¼ tsp salt

  • ½ cup (1 stick / 115g) unsalted butter, softened

  • ¾ cup (150g) granulated sugar

  • 2 large eggs

  • ½ cup (120ml) whole milk, room temperature

  • 1 tsp vanilla extract


👩‍🍳 Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.

  2. Mix dry ingredients:

    • In a bowl, whisk together flour, baking powder, and salt. Set aside.

  3. Cream butter and sugar:

    • In a large mixing bowl, beat butter and sugar until light and fluffy (about 2–3 minutes).

  4. Add eggs:

    • Beat in the eggs one at a time, mixing well after each.

  5. Add milk and vanilla:

    • Stir in the vanilla, then add the milk. The mixture may look slightly curdled — that’s okay.

  6. Combine:

    • Gradually add the dry ingredients and mix just until combined. Don’t overmix.

  7. Bake:

    • Pour batter into the prepared pan and smooth the top.

    • Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.

  8. Cool:

    • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.


🍽️ Serving Ideas:

  • Dust with powdered sugar

  • Serve with fruit compote or berry jam

  • Add a vanilla glaze: Mix ½ cup powdered sugar + 1–2 tsp milk + splash of vanilla


📝 Optional Add-Ins:

  • ½ cup chocolate chips or blueberries

  • Zest of 1 lemon or orange for a citrus version

  • 1 tsp almond extract for a flavor twist
