🛒 Ingredients (Serves 4)

For the Proteins:

  • ¾ lb beef sirloin or flank steak, thinly sliced

  • ¾ lb large shrimp, peeled and deveined

  • Salt & pepper, to taste

  • 1 tbsp olive oil (for searing)

For the Glaze:

  • ¼ cup balsamic vinegar

  • 2 tbsp honey (or maple syrup)

  • 1 tbsp Dijon mustard

  • 2 garlic cloves, minced

  • 1 tsp dried oregano or Italian seasoning

  • Optional: ¼ tsp red pepper flakes for a kick

For the Veggies (choose a mix):

  • 1 zucchini, sliced

  • 1 red bell pepper, sliced

  • 1 cup cherry tomatoes

  • 1 small red onion, sliced

  • 1 cup baby spinach or kale (optional, added at the end)

  • 2 tbsp olive oil

  • Salt, pepper, and dried oregano


👨‍🍳 Instructions

1. Prepare the Glaze

  • In a small saucepan, combine balsamic vinegar, honey, mustard, garlic, oregano, and red pepper flakes.

  • Simmer over medium heat for 4–5 minutes until slightly thickened.

  • Set aside to cool — it will thicken more as it rests.

2. Cook the Veggies

Option A (Roasted):

  • Preheat oven to 425°F (220°C).

  • Toss chopped veggies with olive oil, salt, pepper, and oregano.

  • Roast for 20–25 minutes, stirring halfway, until tender and slightly charred.

Option B (Sautéed):

  • Heat 1 tbsp olive oil in a large skillet over medium-high heat.

  • Add veggies and cook, stirring frequently, for 8–10 minutes until softened and golden. Add spinach/kale in the last minute.

3. Cook the Beef & Shrimp

  • Heat 1 tbsp olive oil in a skillet or grill pan over medium-high heat.

  • Season beef with salt and pepper. Sear slices for 2–3 minutes per side until browned and cooked through. Remove and keep warm.

  • In the same skillet, cook shrimp for 1–2 minutes per side until pink and opaque. Remove from heat.

4. Glaze Everything

  • Return beef and shrimp to the pan, pour glaze over, and toss gently to coat.

  • Let it cook together for 1–2 minutes so everything is glossy and flavorful.

5. Assemble

  • Serve beef and shrimp over a bed of roasted/sautéed veggies.

  • Optional: Garnish with crumbled feta, chopped parsley, or a squeeze of lemon juice.
