Ingredients (Serves 4):

4 salmon fillets (about 6 oz each)

2 tbsp olive oil

2 garlic cloves, minced

Juice of 1 lemon

1 tsp dried oregano (or 1 tbsp fresh)

Salt and black pepper, to taste
Topping:

1/2 cup sun-dried tomatoes (packed in oil), drained and chopped

1/2 cup crumbled feta cheese

1/4 cup Kalamata olives, sliced (optional)

2 tbsp chopped red onion (optional)

2 tbsp chopped fresh parsley or basil
Instructions:

Preheat oven to 400°F (200°C).

Line a baking dish with foil or parchment paper for easy cleanup.

Place salmon fillets in the baking dish, skin-side down.
