Meatloaf with Caramelized Onion Gravy is a comforting, savory dish that brings rich flavors to the table. Here’s a recipe for you to try:

Ingredients:

For the Meatloaf:

  • 1 lb ground beef (or a mix of beef and pork)
  • 1/2 cup breadcrumbs (preferably panko or regular)
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/4 cup ketchup (plus extra for topping)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme (optional)
  • Salt and pepper, to taste

For the Caramelized Onion Gravy:

  • 2 tablespoons butter
  • 2 medium onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh thyme (optional)
  • Salt and pepper, to taste
  • 1 tablespoon flour (optional, to thicken)

Instructions:

1. Prepare the Meatloaf:

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, combine the breadcrumbs and milk. Let it sit for a few minutes until the breadcrumbs absorb the milk.
  3. In a large bowl, mix the ground meat, egg, ketchup, Worcestershire sauce, finely chopped onion, minced garlic, thyme, salt, and pepper.
  4. Add the breadcrumb mixture to the bowl and combine everything gently until just mixed (avoid overmixing to keep the meatloaf tender).
  5. Shape the mixture into a loaf and place it in a greased baking dish or on a lined baking sheet.
  6. Spread a thin layer of ketchup on top of the meatloaf for extra flavor and moisture.
  7. Bake for about 1 hour, or until the meatloaf is cooked through (internal temperature should be 160°F/71°C).

2. Make the Caramelized Onion Gravy:

  1. While the meatloaf is baking, heat butter in a large skillet over medium heat.
  2. Add the sliced onions and cook, stirring occasionally, for 20-25 minutes until they are soft, golden brown, and caramelized. Make sure to stir occasionally to prevent burning.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. If you want a thicker gravy, sprinkle the flour over the onions and stir to combine. Let it cook for 1-2 minutes.
  5. Pour in the beef broth and Worcestershire sauce. Bring to a simmer and cook for 5-10 minutes, until the gravy thickens to your desired consistency.
  6. Season with salt and pepper to taste, and stir in fresh thyme if desired.

3. Serve:

  1. Once the meatloaf is done, let it rest for about 10 minutes before slicing.
  2. Serve slices of meatloaf with a generous pour of the caramelized onion gravy.

Optional Sides:

  • Mashed potatoes or roasted potatoes
  • Steamed vegetables or a green salad
