  • 2 medium cucumbers, thinly sliced (peeled if preferred)
  • 2 medium tomatoes, cut into wedges or large chunks
  • Β½ medium red onion, thinly sliced
  • Β½ cup white vinegar or apple cider vinegar

  • 2 tbsp olive oil (optional, for richness)
  • 1–2 tsp sugar (adjust to taste)
  • Salt & pepper, to taste
  • 1 tsp dried oregano or Italian seasoning
  • Optional: fresh dill, parsley, or basil for garnish

  1. Prep the Vegetables:
    Slice cucumbers, tomatoes, and onion. Place them in a large mixing bowl.
  2. Make the Marinade:
    In a small bowl or jar, whisk together vinegar, water, olive oil (if using), sugar, salt, pepper, and dried herbs.
  3. Combine & Marinate:
    Pour marinade over the vegetables. Toss to coat evenly.
    Cover and refrigerate for at least 1 hour, stirring occasionally.
    For best flavor, chill for 3–4 hours or overnight.
  4. Serve:
    Serve chilled, with a slotted spoon. Garnish with fresh herbs if desired.
