Here’s a detailed recipe for Loaded Cheesy Pockets — delicious, stuffed pockets filled with cheese and tasty fillings. They’re perfect as snacks, appetizers, or even a quick meal.


Loaded Cheesy Pockets Recipe

Ingredients:

For the dough:

  • 2 cups all-purpose flour

  • 1/2 tsp salt

  • 1 tsp sugar

  • 2 tbsp oil (vegetable or olive oil)

  • 3/4 cup warm water (adjust as needed)

  • 1 tsp instant yeast (optional, for a softer dough)

For the filling:

  • 1 cup shredded mozzarella cheese (or mix of cheddar and mozzarella)

  • 1/2 cup cooked and crumbled bacon (or cooked sausage or chicken)

  • 1/4 cup finely chopped onions

  • 1/4 cup finely chopped bell peppers (any color)

  • 1/4 cup corn kernels (optional)

  • 1/4 cup chopped jalapeños (optional, for a spicy kick)

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning (or mixed herbs)

  • Salt and pepper to taste

  • 1 tbsp butter (for brushing)


Instructions:

1. Prepare the dough:
  • In a mixing bowl, combine flour, salt, sugar, and yeast (if using).

  • Add oil and warm water gradually, mixing until a dough forms.

  • Knead for about 5-7 minutes until smooth and elastic.

  • Cover with a damp cloth and let it rest for 30 minutes (or until slightly puffed).

2. Prepare the filling:
  • In a bowl, mix shredded cheese, cooked bacon (or your choice of meat), onions, bell peppers, corn, jalapeños, garlic powder, Italian seasoning, salt, and pepper.

  • Adjust ingredients to your taste.

3. Assemble the pockets:
  • Preheat your oven to 375°F (190°C).

  • Divide the dough into 6-8 equal balls.

  • Roll each ball into a circle about 5-6 inches in diameter on a lightly floured surface.

  • Spoon a generous amount of the filling onto one half of the circle, leaving a border around the edges.

  • Fold the other half over the filling to form a half-moon shape.

  • Press edges firmly with a fork to seal well.

4. Bake:
  • Place the pockets on a baking sheet lined with parchment paper.

  • Brush the tops with melted butter for a golden finish.

  • Optional: Make small slits on top for steam to escape.

  • Bake for 18-20 minutes, or until golden brown and crispy.

5. Serve:
  • Let them cool for a few minutes.

  • Serve warm with dipping sauces like marinara, ranch, or sour cream.
