Here’s a delicious and cozy Keto Pumpkin Dutch Baby recipe — a low-carb twist on the classic puffy skillet pancake, infused with warm pumpkin spice and fall flavor. It’s perfect for breakfast, brunch, or dessert and totally keto-friendly.

🧾 Ingredients:

Wet Ingredients:

  • 3 large eggs (room temperature)

  • 1/4 cup pumpkin purée (unsweetened, NOT pumpkin pie filling)

  • 2 tbsp heavy cream (or unsweetened almond milk)

  • 1 tsp vanilla extract

  • 1 tbsp melted butter (plus more for greasing)

Dry Ingredients:

  • 1/4 cup almond flour

  • 1 tbsp coconut flour

  • 1/2 tsp baking powder

  • 1–2 tbsp erythritol, monk fruit, or sweetener of choice (adjust to taste)

  • 1 tsp pumpkin pie spice (or combo of cinnamon, nutmeg, ginger, clove)

  • Pinch of salt


🍳 Instructions:


1. Preheat Oven and Skillet

  • Preheat oven to 425°F (220°C).

  • Place a cast-iron skillet (8–10 inch) in the oven to heat up (this helps it puff).


2. Make the Batter

  1. In a blender or bowl, combine eggs, pumpkin purée, cream, vanilla, and melted butter.

  2. Blend or whisk until smooth.

  3. Add almond flour, coconut flour, sweetener, baking powder, pumpkin spice, and salt.

  4. Blend again (or whisk until fully combined and smooth).


3. Bake the Dutch Baby

  1. Carefully remove the hot skillet from the oven.

  2. Add a little butter to coat the bottom and sides (swirl to melt).

  3. Pour the batter directly into the hot skillet.

  4. Quickly return it to the oven.

🕒 Bake for 15–18 minutes, or until puffed, golden on the edges, and set in the center.

It may deflate slightly after removing — that’s normal!


🧁 Optional Toppings (All Keto-Friendly)

  • Whipped cream or coconut cream

  • Keto maple syrup or sugar-free syrup

  • Chopped pecans or walnuts

  • Dash of cinnamon or powdered erythritol

  • Extra dollop of pumpkin purée

  • Room temp eggs help the Dutch baby puff more.

  • Don’t open the oven while baking — it may collapse.

  • Serve immediately for the best texture and wow factor!
