A Keto Brownie Loaf is a delicious, low-carb version of a traditional brownie, with all the rich, fudgy texture and chocolate flavor, but without the sugar and high-carb ingredients. Here’s a simple recipe to make a keto-friendly brownie loaf!

Ingredients:

  • 1 1/2 cups almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (melted) or coconut oil
  • 1/2 cup erythritol (or any keto-friendly sweetener of your choice)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup unsweetened almond milk (or coconut milk)
  • 1/2 cup sugar-free chocolate chips (optional, for extra fudginess)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease a loaf pan (8×4 inches) or line it with parchment paper.

2. Prepare the Dry Ingredients:

  • In a large bowl, combine the almond flour, unsweetened cocoa powder, baking powder, and salt. Whisk together to ensure the dry ingredients are evenly distributed.

3. Prepare the Wet Ingredients:

  • In another bowl, whisk together the melted butter (or coconut oil), erythritol, eggs, vanilla extract, and almond milk. Mix until well combined and smooth.

4. Combine Wet and Dry Ingredients:

  • Slowly pour the wet ingredients into the dry ingredients, mixing until fully combined. The batter should be thick and fudgy.

5. Add Chocolate Chips (Optional):

  • If using, fold in the sugar-free chocolate chips for extra chocolatey goodness.

6. Pour the Batter into the Loaf Pan:

  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.

7. Bake:

  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out mostly clean (a few crumbs are fine for a fudgy texture). Be careful not to overbake, as you want the loaf to stay moist and fudgy.

8. Cool and Slice:

  • Let the brownie loaf cool in the pan for 10-15 minutes, then transfer it to a wire rack to cool completely. Once cooled, slice into 8-10 pieces.
