🍯🔥 Hot Honey Chicken Skewers

Prep Time: 15 minutes (+ marinating time)
Cook Time: 12–15 minutes
Serves: 4

📝 Ingredients:

🔹 For the Chicken:

  • 1 ½ lbs boneless skinless chicken thighs or breasts, cut into 1½-inch cubes
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp hot sauce (like Frank’s or sriracha)
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper

🔹 For the Hot Honey Glaze:

  • ⅓ cup honey
  • 1–2 tbsp hot sauce (adjust to taste)
  • ½ tsp chili flakes (optional, for extra heat)
  • 1 tbsp butter (optional, for richness)

🍢 Instructions:

🔸 1. Marinate the Chicken:

  • In a bowl or zip-top bag, mix chicken with olive oil, vinegar, hot sauce, paprika, garlic powder, salt, and pepper.
  • Cover and marinate for at least 30 minutes, or up to 4 hours in the fridge.

🔸 2. Soak Skewers (if using wood):

  • Soak wooden skewers in water for 30 minutes to prevent burning. (Skip if using metal skewers.)

🔸 3. Make the Hot Honey Glaze:

  • In a small saucepan, combine honey, hot sauce, chili flakes, and butter (if using).
  • Warm over low heat, stirring until melted and combined.
  • Remove from heat and set aside.

🔸 4. Assemble Skewers:

  • Thread the marinated chicken pieces onto skewers (4–5 pieces per skewer).

🔸 5. Cook the Skewers:

Option 1: Grill

  • Preheat grill to medium-high heat.
  • Grill skewers for 10–12 minutes, turning occasionally, until fully cooked and nicely charred.

Option 2: Oven

  • Preheat oven to 425°F (220°C).
  • Line a baking sheet with foil and place skewers on a wire rack.
  • Bake for 15–18 minutes, broil for the last 1–2 minutes to char.

Option 3: Air Fryer

  • Preheat to 390°F (200°C).
  • Cook skewers for 10–12 minutes, flipping halfway.

🔸 6. Glaze & Serve:

  • Brush hot honey glaze over the cooked chicken skewers while they’re still hot.
  • Garnish with chopped parsley, lime wedges, or extra chili flakes, if desired.

✅ Serving Ideas:

  • Over rice or quinoa
  • With a side of grilled veggies or slaw
  • Chopped up in tacos or wraps
  • With a drizzle of cool ranch or yogurt sauce to balance the heat
