If you’re craving a Homemade Taco Bell Enchirito, you’re in for a treat! The Enchirito is a classic Taco Bell dish, combining a soft flour tortilla, seasoned beef, beans, and a cheesy, saucy wrap that’s baked to perfection. Here’s how you can recreate this delicious meal at home!

🌮 Homemade Taco Bell Enchirito Recipe

🥩 Ingredients:

  • For the Enchirito:
    • 1 lb ground beef (or ground turkey for a lighter option)
    • 1 tablespoon olive oil
    • 1 packet Taco Bell taco seasoning (or homemade taco seasoning)
    • 1/2 cup water (or as per seasoning packet instructions)
    • 1 cup refried beans (canned or homemade)
    • 6 large flour tortillas
    • 2 cups shredded cheddar cheese (or a blend of cheddar and Monterey Jack)
    • 1 cup enchilada sauce (store-bought or homemade)
  • For Homemade Taco Seasoning (optional):
    • 1 tablespoon chili powder
    • 1 teaspoon cumin
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1/2 teaspoon smoked paprika
    • 1/2 teaspoon oregano
    • Salt and pepper, to taste

👩‍🍳 Instructions:

  1. Cook the Ground Beef:
In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned (about 5-7 minutes). Drain any excess fat.
  2. Add Taco Seasoning:
Stir in the Taco Bell taco seasoning or homemade taco seasoning. Add the water (as directed by the seasoning packet or about 1/2 cup if using homemade seasoning). Let it simmer for about 5 minutes until the beef is well-coated and the sauce thickens slightly. Remove from heat.
  3. Prepare the Enchiladas:
Preheat your oven to 350°F (175°C). In a separate skillet, warm the flour tortillas for about 20 seconds per side over medium heat to make them more pliable.
  4. Assemble the Enchirito:
    • Spread a thin layer of refried beans on each tortilla.
    • Add a few spoonfuls of the seasoned beef mixture on top of the beans.
    • Sprinkle with a generous handful of shredded cheese.
    • Roll up the tortillas tightly to form burrito-style wraps, folding in the sides as you go.
  5. Bake the Enchirito:
Place the rolled tortillas seam-side down in a baking dish. Pour the enchilada sauce over the top of each Enchirito, ensuring they are all covered with sauce. Sprinkle additional shredded cheese on top for extra cheesiness.
  6. Bake:
Bake the Enchiritos in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly, and the edges of the tortillas are lightly crispy.
  7. Serve:
Once out of the oven, allow the Enchiritos to cool slightly before serving. Garnish with chopped onions, cilantro, or a dollop of sour cream if desired. Serve with a side of Mexican rice or a salad for a complete meal.

Tips:

  • Add Some Heat: If you like a bit of spice, you can add jalapeños to the beef mixture or sprinkle some hot sauce over the top before baking.
  • Vegetarian Option: Skip the beef and use more beans or sautéed vegetables like bell peppers, onions, and zucchini for a delicious vegetarian version.
  • Extra Toppings: You can top your Enchirito with guacamole, salsa, or shredded lettuce to make it even more authentic.

This Homemade Taco Bell Enchirito recipe brings all the delicious flavors of the fast-food favorite right to your kitchen, and you can tweak it to fit your tastes! Whether you stick with the classic beef filling or try some variations, it’s sure to be a hit.
