Homemade Pistachio Pudding Cake Recipe

Ingredients:

For the Cake:

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pistachios (unsalted)
  • 1 box (3.4 oz) instant pistachio pudding mix (for flavor)

For the Pudding Layer:

  • 2 cups whole milk
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon vanilla extract

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9-inch baking dish or an 8×8-inch square dish.
  2. Make the Cake Batter:
    • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
    • In another bowl, whisk the milk, melted butter, eggs, and vanilla extract.
    • Gradually mix the wet ingredients into the dry ingredients, stirring until well combined.
    • Stir in the chopped pistachios and pistachio pudding mix until evenly distributed.
  3. Prepare the Pudding:
    • In a medium saucepan, whisk together the milk, sugar, and cornstarch over medium heat.
    • Stir continuously until the mixture thickens and comes to a simmer. Once it thickens, remove from heat and add vanilla extract.
    • Pour the pudding over the cake batter in the prepared baking dish. Do not stir—this will create a pudding layer that forms underneath the cake as it bakes.
  4. Bake the Cake:
    • Bake in the preheated oven for 30-35 minutes, or until the top is golden and a toothpick inserted into the cake portion (not the pudding layer) comes out clean.
    • The pudding layer will be soft and gooey, and the cake will rise on top.
  5. Cool and Serve:
    • Allow the Pistachio Pudding Cake to cool for a few minutes before serving. It’s best served warm, but it’s also delicious when it’s chilled.
    • Garnish with additional chopped pistachios or a dollop of whipped cream if desired.
