📝 Ingredients (Makes ~12 cookies)

  • 1/2 cup natural peanut butter (creamy or crunchy)
  • 1/4 cup plain Greek yogurt (2% or full-fat preferred)
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 egg
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup oat flour (or blend rolled oats into flour)
  • 1/4 cup mini chocolate chips (optional)
  • 12 dark chocolate squares or chunks (for centers)

🥣 Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix wet ingredients: In a medium bowl, whisk together peanut butter, Greek yogurt, honey, vanilla, and the egg until smooth.
  3. Add dry ingredients: Stir in baking soda, salt, and oat flour. Mix until combined. Fold in mini chocolate chips if using.
  4. Form cookies: Scoop ~1.5 tbsp of dough and roll into a ball. Flatten slightly, place a piece of chocolate in the center, then wrap dough around it to seal.
  5. Bake for 8–10 minutes, or until edges are lightly golden. Do not overbake—cookies will set as they cool.
  6. Cool slightly on the tray (about 5–10 minutes) before transferring to a wire rack.
