Greek Cucumber and Tomato Salad

Here’s a fresh, simple, and tangy Greek Cucumber and Tomato Salad — perfect as a side or light meal.


🥗 Greek Cucumber & Tomato Salad

🍅 Serves: 4

⏱️ Prep Time: 10 minutes


🧾 Ingredients:

  • 2 large cucumbers, diced or sliced (English or Persian cucumbers work great)
  • 3–4 ripe tomatoes, chopped (Roma or cherry tomatoes halved)
  • 1 small red onion, thinly sliced
  • ½ cup Kalamata olives, pitted and halved
  • ½ cup crumbled feta cheese
  • 2 tbsp fresh parsley or oregano, chopped

🧴 Dressing:

  • 3 tbsp extra virgin olive oil
  • 1½ tbsp red wine vinegar
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper, to taste

🔪 Instructions:

  1. In a large bowl, combine cucumbers, tomatoes, red onion, and olives.
  2. In a small bowl, whisk together olive oil, red wine vinegar, garlic, oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Sprinkle crumbled feta and fresh herbs on top.
  5. Serve immediately or chill for 30 minutes for flavors to meld.

🍽️ Tips:

  • For extra freshness, add a squeeze of lemon juice.
  • Serve with warm pita bread or alongside grilled meats.
  • Add chopped bell peppers or radishes for crunch.
