🧾 Ingredients:
- 2 large cucumbers, diced or sliced (English or Persian cucumbers work great)
- 3–4 ripe tomatoes, chopped (Roma or cherry tomatoes halved)
- 1 small red onion, thinly sliced
- ½ cup Kalamata olives, pitted and halved
- ½ cup crumbled feta cheese
- 2 tbsp fresh parsley or oregano, chopped
🧴 Dressing:
- 3 tbsp extra virgin olive oil
