Garlic Butter Steak with Creamy Mashed Potatoes

Ingredients:

For the Garlic Butter Steak:
  • 2 ribeye steaks (or your favorite cut of steak)

  • 2 tablespoons olive oil (for searing)

  • 4 tablespoons unsalted butter

  • 6 garlic cloves, smashed

  • 1 sprig fresh rosemary (optional)

  • Salt and pepper (to taste)

  • 1 tablespoon fresh parsley, chopped (for garnish)

For the Creamy Mashed Potatoes:
  • 4 large russet potatoes, peeled and cubed

  • 4 tablespoons unsalted butter

  • 1/2 cup heavy cream (or milk for a lighter version)

  • 1/4 cup sour cream (optional, for extra creaminess)

  • Salt and pepper (to taste)

  • 1/2 teaspoon garlic powder (optional, for extra flavor)

  • Fresh parsley (for garnish)


Instructions:

For the Garlic Butter Steak:

  1. Prepare the Steak:

    • Let the steaks sit at room temperature for 20-30 minutes before cooking. This ensures even cooking.

    • Pat the steaks dry with a paper towel to remove any moisture (this helps in getting a good sear).

    • Season generously with salt and pepper on both sides.

  2. Sear the Steak:

    • Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat. Add the olive oil.

    • Once the oil is hot and shimmering, carefully place the steaks in the pan. Sear the steaks for about 3-4 minutes per side for medium-rare (adjust cooking time depending on your preferred doneness). Do not move the steaks around; let them sear without touching them.

  3. Add the Garlic Butter:

    • Once the steaks are seared to your liking, reduce the heat to medium-low. Add the butter, smashed garlic cloves, and fresh rosemary (if using) to the pan.

    • Let the butter melt and spoon the garlic butter over the steaks repeatedly, basting them for another 2-3 minutes. This adds rich flavor and moisture.

  4. Rest the Steak:

    • Remove the steaks from the skillet and let them rest on a plate for 5 minutes before slicing. This helps the juices redistribute and keeps the steak tender.


For the Creamy Mashed Potatoes:

  1. Cook the Potatoes:

    • Peel and cube the russet potatoes into evenly sized chunks. Add them to a large pot and cover with cold water.

    • Bring to a boil over medium-high heat, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are fork-tender.

  2. Mash the Potatoes:

    • Drain the cooked potatoes and return them to the pot. Use a potato masher or a hand mixer to mash the potatoes until smooth.

  3. Make them Creamy:

    • Add the butter, heavy cream, and sour cream (if using) to the mashed potatoes. Continue mashing until the potatoes are creamy and smooth. Adjust the amount of cream or milk to get the desired consistency.

    • Season with salt, pepper, and garlic powder (optional). Taste and adjust the seasoning if necessary.

  4. Serve:

    • Transfer the mashed potatoes to a serving bowl, and garnish with fresh parsley.


To Serve:

  • Plate the steak and slice it against the grain.

  • Serve alongside a generous scoop of creamy mashed potatoes.

  • Drizzle any remaining garlic butter from the pan over the steak for extra flavor, and garnish with freshly chopped parsley.


Tips:

  • Steak Doneness: For best results, use a meat thermometer to ensure your steak is cooked to your preferred doneness:

    • Rare: 120°F (49°C)

    • Medium-Rare: 130°F (54°C)

    • Medium: 140°F (60°C)

    • Medium-Well: 150°F (66°C)

    • Well-Done: 160°F (71°C)

  • Garlic Butter: You can infuse the garlic in the butter for a few minutes before adding it to the pan to make it even more flavorful. For a richer taste, add a splash of white wine or beef broth to the pan while cooking the steaks.
