🛒 Ingredients

For the Beef Chops:

  • 4 bone-in or boneless beef chops (about 1-inch thick)
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • Salt and black pepper, to taste
  • 1 tsp dried thyme or rosemary (optional)
  • 1 tbsp olive oil

For the Cheesy Potato Bake:

  • 4 large potatoes (Russet or Yukon Gold), thinly sliced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup heavy cream or half-and-half
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 tsp dried thyme or rosemary (optional)
  • 2 tbsp butter, cut into small pieces

👩‍🍳 Instructions

1. Prepare the Potato Bake:

  • Preheat oven to 375°F (190°C).
  • Grease a 9×13-inch baking dish.
  • Arrange a layer of sliced potatoes in the dish. Sprinkle with minced garlic, salt, pepper, and some thyme or rosemary.
  • Pour a little cream over the potatoes and sprinkle some cheddar and mozzarella.
  • Repeat layers until potatoes and cheese are used up, finishing with cheese on top.
  • Dot the top with small butter pieces.
  • Cover tightly with foil and bake for 35 minutes. Remove foil and bake 10 more minutes or until golden and bubbly.

2. Cook the Beef Chops:

  • While potatoes bake, season beef chops with salt, pepper, and herbs.
  • Heat olive oil in a large skillet over medium-high heat.
  • Sear chops 4–5 minutes per side until browned and cooked to your liking.
  • Lower heat and add butter and garlic to the pan. Spoon the garlic butter over the chops for 1–2 minutes to baste and infuse flavor.

3. Serve:

  • Plate the beef chops alongside a generous serving of cheesy potato bake.
  • Spoon any remaining garlic butter from the pan over the meat.

📝 Tips & Variations

  • Use smoked gouda or gruyère for a different cheesy flavor in the potato bake.
  • Add caramelized onions or cooked bacon to the potatoes for extra richness.
  • Let beef chops rest a few minutes before serving for juicier results.
