An Egg Roll Stir Fry sounds like a delicious and quick meal that combines the flavors of a classic egg roll but without the deep-frying. It’s a great way to enjoy the taste of egg rolls in a lighter, healthier stir-fry form. Here’s a simple recipe for an Egg Roll Stir Fry:

Ingredients:

  • For the Stir Fry:

    • 2 tablespoons sesame oil (or vegetable oil)
    • 1 lb (450g) ground pork (or chicken, beef, or tofu)
    • 2 cups coleslaw mix (shredded cabbage and carrots)
    • 1 bell pepper, thinly sliced
    • 1/2 cup sliced mushrooms (optional)
    • 2-3 green onions, chopped
    • 2 cloves garlic, minced
    • 1 tablespoon fresh ginger, grated (or 1 teaspoon ground ginger)
    • 1/4 cup soy sauce (or tamari for gluten-free)
    • 1 tablespoon rice vinegar
    • 1 tablespoon hoisin sauce (optional, for a little sweetness)
    • 1 tablespoon oyster sauce (optional, for depth of flavor)
    • 1 teaspoon sesame oil (for finishing)
    • 2 eggs, lightly beaten
    • Salt and pepper to taste
  • For Garnish:

    • Chopped green onions
    • Sesame seeds (optional)
    • Sriracha or chili sauce (optional, for heat)

Instructions:

  1. Cook the Ground Meat:

    • Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat.
    • Add the ground pork (or chosen protein) and cook, breaking it apart with a spatula, until browned and cooked through. Season with a pinch of salt and pepper.
    • Remove the cooked meat from the pan and set aside.
  2. Sauté the Vegetables:

    • In the same pan, add another tablespoon of sesame oil.
    • Add the garlic, ginger, and bell pepper. Stir-fry for about 2 minutes until fragrant and slightly softened.
    • Add the coleslaw mix (or shredded cabbage and carrots) and mushrooms (if using). Stir-fry for 4-5 minutes until the cabbage begins to soften but still has some crunch.
  3. Combine Ingredients:

    • Push the vegetables to the side of the pan, creating space in the center.
    • Add the beaten eggs to the center of the pan. Scramble them until they are cooked through, then mix them into the vegetables.
    • Add the cooked ground meat back into the pan, along with soy sauce, rice vinegar, hoisin sauce, and oyster sauce (if using). Stir everything together to combine and cook for an additional 2-3 minutes.
  4. Finish the Dish:

    • Drizzle a little sesame oil over the stir-fry and stir to combine.
    • Taste and adjust seasoning with more soy sauce, rice vinegar, or salt and pepper if needed.
  5. Garnish and Serve:

    • Serve the egg roll stir fry hot, garnished with chopped green onions and sesame seeds, and a drizzle of sriracha or chili sauce if you like some heat.
