Here’s a simple and delicious Low-Carb Sautéed Zucchini with Mushrooms recipe — great as a side dish or even a light main!


🥒 Easy & Tasty Low-Carb Sautéed Zucchini with Mushrooms

✅ Ingredients:

  • 2 medium zucchini, sliced into half-moons
  • 8 oz mushrooms (cremini or white), sliced
  • 2 tbsp olive oil (or butter for more richness)
  • 2 garlic cloves, minced
  • Salt and pepper, to taste
  • 1/2 tsp dried Italian seasoning or thyme
  • Optional: grated Parmesan, fresh parsley, or a squeeze of lemon

🔥 Instructions:

  1. Heat oil in a large skillet over medium heat.
  2. Add mushrooms and cook for 5–6 minutes, stirring occasionally, until they start to brown and release their moisture.
  3. Add garlic and stir for 30 seconds until fragrant.
  4. Add zucchini and season with salt, pepper, and Italian seasoning.
  5. Sauté for another 5–7 minutes, until zucchini is tender but not mushy. Stir occasionally to ensure even cooking.
  6. Taste and adjust seasoning. Optional: Sprinkle with Parmesan or chopped parsley before serving.

💡 Tips:

  • Don’t overcrowd the pan—cook in batches if needed for better browning.
  • Add red pepper flakes for a spicy kick.
  • Use ghee instead of oil for a deeper, nutty flavor and extra low-carb boost.
