  • Β½ cup sour cream (optional, for extra creaminess)
  • Β½ cup shredded cheddar cheese (optional, for topping)
  • ΒΌ cup grated Parmesan (optional)
  • 2 tbsp olive oil or melted butter
  • Salt & pepper, to taste
  • Fresh parsley or chives (for garnish)

  1. Prep Crockpot: Lightly spray your slow cooker with nonstick spray or use a liner.
  2. Layer Potatoes: Place halved baby potatoes at the bottom. Drizzle with olive oil, sprinkle with salt & pepper.
  3. Season Chicken: Place chicken breasts on top of the potatoes. Sprinkle ranch seasoning evenly over chicken and potatoes.
  4. Add Soup: Spread the cream of chicken soup over the chicken. You can also whisk it with the sour cream first for extra richness, then pour it over.
  5. Cook:
    • Low: 6–7 hours
    • High: 3–4 hours
      (Chicken should be tender and easily shreddable; potatoes fork-tender.)
