🍤 Crispy Shrimp Rolls with Creamy Dip

🧺 Ingredients

For the Shrimp Rolls:

  • 1 lb raw shrimp, peeled, deveined, and chopped

  • 2 cloves garlic, minced

  • 1 tsp ginger, minced (optional)

  • 1 small carrot, finely shredded

  • 2 green onions, finely chopped

  • 1 tbsp soy sauce

  • 1 tsp sesame oil or olive oil

  • Salt and pepper, to taste

  • 12–16 spring roll wrappers or egg roll wrappers

  • 1 egg, beaten (for sealing)

  • Oil for frying (vegetable or canola)

For the Creamy Dip:

  • ½ cup mayonnaise

  • 2 tbsp sweet chili sauce or sriracha (adjust to taste)

  • 1 tsp lime juice or rice vinegar

  • ½ tsp garlic powder

  • Optional: chopped cilantro or chives for garnish

👩‍🍳 Instructions

🥟 Make the Shrimp Filling:

  1. In a bowl, combine chopped shrimp, garlic, ginger, carrot, green onions, soy sauce, sesame oil, salt, and pepper.

  2. Mix until well combined. You can quickly sauté the filling for 2–3 minutes if you want it partially cooked before wrapping (optional).

🌀 Assemble the Rolls:

  1. Lay a wrapper on a clean surface like a diamond.

  2. Place about 2 tablespoons of filling near the bottom corner.

  3. Fold the bottom over the filling, tuck in the sides, and roll tightly.

  4. Seal the edge with a dab of beaten egg.

  5. Repeat with remaining wrappers and filling.

🍳 Fry the Rolls:

  1. Heat about 2 inches of oil in a deep skillet or pan over medium heat (350°F / 175°C).

  2. Fry 3–4 rolls at a time until golden brown and crispy (about 2–3 minutes per side).

  3. Drain on paper towels.

💡 Air fryer option: Spray rolls lightly with oil and cook at 400°F (200°C) for 8–10 minutes, flipping halfway.

🥣 Make the Creamy Dip:

  1. Whisk together mayo, chili sauce, lime juice, and garlic powder.

  2. Chill until ready to serve.

📝 Tips & Variations:

  • Add a pinch of chili flakes for a spicy kick.

  • Use pre-cooked shrimp to save time.

  • Swap shrimp with crab, chicken, or tofu if desired.

  • Wrap in rice paper and bake for a lighter, gluten-free version.
