Here’s a delicious recipe for Crispy Potato & Cheese Bombs with Garlic Butter — crispy on the outside, cheesy and soft inside, and loaded with garlic buttery goodness!


🥔🧀 Crispy Potato & Cheese Bombs with Garlic Butter

Serves: 4 | Prep Time: 20 min | Cook Time: 25 min


🛒 Ingredients

For the Potato Bombs:

  • 3 cups mashed potatoes (prepared, chilled or fresh)
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • ½ cup grated Parmesan cheese
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (panko for extra crispiness)
  • Salt and pepper, to taste
  • Optional: chopped chives or green onions for extra flavor

For the Garlic Butter:

  • ½ cup unsalted butter (1 stick)
  • 4 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped (or 1 tsp dried parsley)
  • Pinch of salt

👩‍🍳 Instructions

1. Prepare the Potato Mixture:

  • In a large bowl, mix mashed potatoes, shredded cheddar, Parmesan, salt, pepper, and optional herbs.
  • Make sure the mixture is firm enough to form balls. If too soft, add a bit of flour.

2. Form the Balls:

  • Roll the potato mixture into golf ball-sized balls.

3. Coat the Potato Balls:

  • Set up a breading station: one bowl with flour, one with beaten eggs, and one with breadcrumbs.
  • Roll each ball in flour, then dip in egg, and finally coat with breadcrumbs.
  • For extra crunch, repeat the egg and breadcrumb step (double breading).

4. Cook the Potato Bombs:

  • Heat oil in a deep fryer or large skillet to 350°F (175°C).
  • Fry potato balls in batches for about 3–4 minutes or until golden brown and crispy.
  • Drain on paper towels.

5. Make Garlic Butter:

  • In a small saucepan, melt butter over medium heat.
  • Add minced garlic and cook for 1–2 minutes until fragrant (do not brown).
  • Stir in parsley and a pinch of salt.

6. Serve:

  • Drizzle garlic butter over crispy potato bombs or toss them gently in the butter before serving.
  • Serve immediately as a snack or appetizer.

📝 Tips & Variations

  • Add cooked bacon bits or diced jalapeños to the potato mixture for extra flavor.
  • Substitute mozzarella cheese for a gooey cheesy center.
  • Bake instead of frying: place breaded balls on a baking sheet and bake at 400°F (200°C) for 20–25 minutes, turning halfway.
