🌯 Crispy Parmesan Garlic Chicken Burritos

🕒 Prep Time: 15 minutes

🍳 Cook Time: 15–20 minutes

🍽️ Serves: 4 burritos

✨ Ingredients:

For the Chicken Filling:

  • 2 cups cooked chicken, shredded or chopped (rotisserie chicken works well)
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • ½ cup shredded Parmesan cheese
  • ¼ cup sour cream or cream cheese
  • 2–3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp paprika (optional)
  • Salt & pepper, to taste
  • 1 tbsp chopped fresh parsley or basil (optional)

For the Burritos:

  • 4 large flour tortillas
  • 1 cup shredded cheese (mozzarella + Parmesan combo for topping)
  • 2 tbsp butter, melted
  • 2 tbsp grated Parmesan cheese (for crust)
  • ½ tsp garlic powder
  • Olive oil or butter for pan-frying

🔪 Instructions:

1. Make the Chicken Filling:

In a mixing bowl, combine:

  • Cooked chicken
  • Shredded cheeses
  • Garlic
  • Sour cream or cream cheese
  • Italian seasoning, paprika, salt, and pepper
  • Mix until creamy and well combined.

2. Assemble the Burritos:

  • Warm tortillas for a few seconds to make them pliable.
  • Divide filling among tortillas, placing in the center.
  • Roll into burritos: fold sides in, then roll tightly from the bottom.

3. Coat with Garlic Parmesan Butter:

  • Mix melted butter with garlic powder and grated Parmesan.
  • Brush the outside of each burrito with this mixture.
  • Sprinkle with a little extra shredded cheese on top (optional but delicious).

4. Crisp the Burritos:

  • Heat a non-stick skillet or griddle over medium heat.
  • Place burritos seam-side down. Cook 2–3 minutes per side until golden brown and crispy.
  • Press down lightly with a spatula to help them brown evenly.

5. Serve Hot:

  • Slice in half and serve with ranch, marinara, garlic aioli, or a light salad.

🔄 Variations:

  • Add sautéed spinach, mushrooms, or roasted red peppers for extra veggies.
  • Use grilled chicken for a smoky flavor.
  • Spice it up with crushed red pepper or a spicy aioli drizzle.
