🥘 Creamy Herb Grilled Chicken with Rice & Green Beans

🌿 Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme or Italian seasoning
  • Salt & black pepper, to taste

For the Creamy Herb Sauce:

  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream (or half-and-half)
  • ½ cup chicken broth
  • ½ tsp Dijon mustard (optional)
  • ½ tsp dried basil
  • ½ tsp oregano or thyme
  • ¼ cup grated Parmesan cheese
  • Salt & pepper, to taste

For the Rice & Green Beans:

  • 1 ½ cups white or brown rice
  • 3 cups water or broth
  • 12 oz fresh green beans, trimmed
  • 1 tbsp olive oil or butter
  • Salt & pepper, to taste

👩‍🍳 Instructions

🔥 1. Marinate & Grill the Chicken:

  1. In a bowl, combine olive oil, lemon juice, garlic powder, onion powder, oregano, thyme, salt, and pepper.
  2. Coat the chicken with the marinade and let it sit for at least 15 minutes (or up to 8 hours in the fridge).
  3. Grill the chicken over medium heat (or pan-sear) for 5–7 minutes per side until cooked through and golden.
  4. Remove from heat and let rest.

🥣 2. Make the Creamy Herb Sauce:

  1. In a skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute.
  2. Add cream, broth, mustard (if using), herbs, and Parmesan. Stir and simmer 5–7 minutes until thickened.
  3. Season with salt and pepper to taste.
  4. Add the grilled chicken to the sauce and coat well.

🍚 3. Prepare Rice & Green Beans:

  1. Cook rice with water or broth according to package instructions (about 15–20 minutes).
  2. While rice cooks, steam or sauté green beans until tender-crisp (about 5–6 minutes).
  3. Season green beans with olive oil or butter, salt, and pepper.

🍽️ To Serve:

  • Plate a bed of rice.
  • Top with the creamy herb chicken.
  • Add a generous serving of green beans on the side.
  • Spoon extra sauce over everything for max flavor.

📝 Tips:

  • Swap cream for Greek yogurt or coconut milk for a lighter version.
  • Add mushrooms or spinach to the sauce for extra veggies.
  • Works well with chicken thighs if you prefer dark meat.
